i want to redo the whole interior..headliner,seat,etc.

You'll have to take it to an upholsterer or a custom restoration shop. Hyundai doesn't provide dimensions on fabric, only the product itself.
But, you could buy all you needed direct from Hyundai, ready to install (wink wink, hint hint).

Maybe the prices of the finished products will give you an idea...

Carpet - $1,313
Headliner w/o sunroof - $730
Headliner w/ sunroof - $421
driver seat bottom cover - $812
driver seat back cover - $833
pass seat bottom cover - $325 or $766
pass seat back cover - $414 or $895
rear seat bottom cover - $691 or $1571
rear seat back cover LH- $183 or $621
rear seat back cover RH - $419 or $1550
trunk carpet - $172

These are MSRP's of the Hyundai OEM products - not what you'd pay from an online store. Your best bet, unless you are determined to sew it yourself, would be to buy the finished products. Tons and tons of websites for interior restorations. If no shop can provide you dimensions, you'll have to measure it yourself.
